Healthy Banana Bread

I don't have any great work story about this. I've brought it to the office lots of times and everyone loves it. But I make it for my family too!

It's delicious, and it forms a yummy crust!

  • Yields: 1 loaf

Ingredients

1/2 cup oil

1/2 cup sugar

2 eggs

2 ripe bananas

1/2 lemon juice and rind

1 cup whole wheat flour

1 cup unbleached white flour

1/2 tablespoon baking powder

1/2 teaspoon baking soda

3/4 cup chopped walnuts

Directions

1Combine oil and sugar

2Add egg and grated lemon rind

3Mash bananas with lemon juice and add to mixture

4Combine dry ingredients, then add to mixture along with nuts

5Bake at 350 degrees for 50 to 60 minutes in greased loaf pan

610 minutes after removing from oven, turn out of pan to cool

7 50 Minutes
