Date Nut Cake

A great treat to share. It only needs a little sugar. Gets most of its sweetness from the dates.

  • Yields: 12 servings


8 oz dates, chopped

1 cup cold water

1/2 cup sugar

1/2 cup unsweetened applesauce

2 tbsp. canola oil

1 egg, separated

pinch of salt

1 tsp. baking soda

1-1/2 cups whole wheat pastry flour

1/3 cup chopped walnuts

1 tsp. vanilla


1Put chopped dates in saucepan with cold water. Cover and bring to a boil.

2Remove from heat. Let stand while preparing the other ingredients.

3Use a mixer to mix the sugar, applesauce, and canola oil.

4Stir in the egg yoke (save the egg white) and pinch of salt.

5Stir baking soda into dates.

6Stir flour and date mixture into the sugar mixture.

7Stir in walnuts and vanilla, blending well.

8In a separate bowl, beat the egg white until stiff.

9Fold into batter.

10Lightly grease a 7x12 baking pan with nonstick cooking spray. Spoon batter into pan.

11Bake at 350 degrees for 25-30 minutes, or until a toothpick comes out clean when poked into the middle.
