Beet and Carrot Soup

Beets are making a comeback, and this beautiful soup is sure to delight. Of course, it requires someplace to reheat it at the office. But here's a tip for the adventurous: During the warm days of summer, try this soup cold. Refreshing!

  • Prep: 26 mins
  • Cook: 45 mins
  • Yields: 6 Servings


1/4 cup unrefined oil

2 beets, diced

2 carrots, diced

1/2 cabbage, shredded

6 cups water

Juice of one lemon


1Sauté diced beets and carrots in the oil for 5 minutes.

2Add cabbage and sauté for 20 more minutes.

3Add water and lemon juice and simmer until tender.

4Season with sea salt and herbs, to taste.
